  • 1 Cup Spinach
  • 1/4 Cup feta cheese
  • Salt and pepper to taste

Method
 

  1. Crack the eggs into a bowl and beat them with a fork.
  2. Heat a non-stick pan over medium heat.
  3. Add the spinach to the pan and cook until wilted.
  4. Pour the beaten eggs over the spinach and stir.
  5. Cook until the eggs are set.
  6. Sprinkle the feta cheese over the eggs.
  7. Season with salt and pepper to taste.
