  • 1/2 Cup Cooked Quinoa
  • 1 Avocado
  • 1 Eggs
  • Salt and pepper to taste

  1. Cut the avocado in half and remove the pit.
  2. Scoop out the avocado flesh and mash it in a bowl.
  3. Cook the eggs to your liking (scrambled, fried, or poached)
  4. In a bowl, layer the quinoa, mashed avocado, and eggs.
  5. Season with salt and pepper to taste.
